Ride into the highlands of Santiago Matatlán, Oaxaca. Hand picked agave that is roasted in stone ovens packed with pine wood and river rock. Limestone tahona-milled, fermented in pine wood vats, and 2x copper-pot distilled. Tasting notes: Salty earth, woody sweetness, and a finish as clean as the Oaxacan wind.
